Quick Pickle

Just the name makes me laugh. But this delicious veggie mix is no laughing matter.

I found myself with a whole lotta fresh veggies like carrots, red onions and cucumbers. I also found myself thinking about Bahn mi sandwiches, lettuce wraps and all other kinds of fun summer foods that a vinegary condiment would go perfectly with. So quick pickle it was!

Quick pickled vegetables are easily brined and stored in the fridge. you can change up the veggies and the flavors. The recipe below is just a guide. You can add in different vegetables like radishes, cabbage, Brussels sprouts (you know I love me some of those little guys), bell peppers, spicy peppers, zucchini, eggplant. Try ’em out!

As for flavor, I went with mustard and coriander seeds in mine. I’ve been thinking about using some cabbage and throwing in mustard and caraway seeds so it’ll be more like a quick sauerkraut. I was also contemplating adding turmeric and curry powder for more of an Indian flare. You can really take this condiment in many different directions. Try something out, have fun, and enjoy it!

Ingredients

  • 1 cup vinegar*
  • 1/2 cup water
  • 1/2 cup shredded carrots
  • 1/2 cucumber, cut into matchsticks
  • 1/2 red onion, thinly sliced
  • 1 clove garlic, minced
  • 1 TBSP chopped green onion
  • 1/2 tsp sea salt
  • 1/2 tsp sugar
  • 1/2 tsp mustard seed
  • 1/2 tsp coriander seed
  • 1 jalepeño, sliced (optional)

Instructions

  1. Wash and dry a medium-large mason jar.
  2. Slice carrots, onions and cucumbers.
  3. Bring water and vinegar to a boil in a medium saucepan.
  4. Add sea salt and sugar. Stir until sugar dissolves and remove from heat. Allow to cool 5-10 minutes.
  5. Place the veggies, green onion, garlic, seeds and jalepeño, if using, in your mason jar and slowly pour the hot vinegar mixture over the veggies.
  6. Allow jar to cool to room temperature then put on the lid and place in the fridge.

Notes

*Use either white distilled or apple cider vinegar for best results. Avoid balsamic.

Enjoy same day for firmer veggies. Allow more time in the fridge for flavors to intensify and veggies to soften.
